Maluns with alp cheese

Ingredients for 4 persons

  • 1 kg floury cooked potatoes from the previous day
  • 200 – 300 g flour
  • salt
  • approx. 80 g butter
  • Alp cheese of your choice

 

Preparation

Peel the potatoes and grate with the rösti grater. Add the flour and salt. Knead and grate with your hands until small balls form.

Heat half the butter in a non-stick frying pan, add the potato mixture and fry for about 20 minutes, turning and poking constantly. Gradually add the remaining butter and continue stirring until the balls are crispy.

Serve the maluns with alp cheese. Also goes well with applesauce, stewed plums or salad.
