Boil the potatoes until soft, leave to cool, peel and mash with a potato masher or ricer. Then knead the flour, egg, salt and butter together into a dough.
Roll the dough out thinly into a large rectangle and brush with beaten egg. Spread the ham and the alp cheese on half the dough, fold the second half of the dough over it and press down lightly. Cut everything into 2 cm wide strips. Turn the strips in several times and brush with egg again. Bake in a preheated convection oven at 180 degrees for about 15 minutes.
Tip: Instead of ham, you can also use herbs or shaved vegetables for the filling. There are no limits to creativity here.
