For the filling:
For the dough, mix the flour and salt in a bowl. Add the butter cut into pieces and rub with your hands until the mixture is evenly crumbly. Add the water and bring together to form a dough (do not knead).
Cool the dough for about 30 minutes.
Warm the butter in a pan, add the onion and leek and steam for about 10 minutes. Leave to cool. Mix the cream, eggs and grated alp cheese, season with salt and pepper and add to the vegetable. Mix well.
Preheat the oven to 220 °C.
Prepare a springform pan of approx. 24 cm diameter: cover the base with baking paper and grease the edges.
Roll out the dough on some flour so that it has a diameter of about 30 cm. Place in the prepared tin. Prick the bottom with a fork. Pour the alp cheese and vegetable mixture into the dish.
Bake on the lowest shelf of the oven for about 40 minutes.
